A healthy Southwest style chicken and rice meal cooked to perfection in a slow cooker.
Chop and dice Fresh Cilantro (1/4 cup) , Scallions (3 stalks) and Tomatoes (2) .
Season the Tyson® Chicken Breasts (1 lb) with Salt (1/8 tsp) , Ground Black Pepper (1/8 tsp) , Garlic Powder (1 tsp) and Onion Powder (1 tsp) on both sides.
Add Low-Sodium Chicken Broth (1 2/3 cups) , Frozen Corn (1 cup) , Canned Black Beans (2 1/3 cups) , cilantro, green onions, tomatoes, Ground Cumin (1 tsp) and seasoned chicken to a slow cooker. Cook on high for 6 hours.
Shred the chicken with a fork and serve over Brown Rice (1 1/2 cups) add extra toppings including more fresh cilantro or green onions. Serve and enjoy!
